Mint Julep (Mocktail)

Ingredients:
  • 1 cup mint leaves
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 250ml pineapplee juice
  • 250ml ginger ale
Method: Roughly chop mint leaves and place in heatproof jug with sugar. Using a wooden spoon, bruise (muddle) the mint and sugar. Add lemon juice, pineapple juice and 125ml boiling water. Mix well. Cover with plastic wrap and leave for 30 minutes. Strain then refrigerate until cold. Add ginger ale and mix well.
Note: Makes 2x300ml glasses.
